Family matters took me to Vail, Colorado, this week. We were greeted by snow and freezing temperatures, which definitely was a bit too much winter too early in the season for my taste. Being off-season in a skiing town can be a bit frustrating, because a lot of stores use the opportunity and close down to be ready when the season begins again. That’s why I was pleasantly surprised when I stumbled upon a little store called „Mountain Cupcakes„.
Lauren Smith opened her store in June 2012 and makes about 20 different kinds of cupcakes: from Gluten-free Red Velvet, Peanut Butter Cup to Pumpkin and Salted Caramel to Vanilla Raspberry, Lauren offers a lot of varieties in her store. Everything is made fresh and with the best ingredients. Lauren has loved baking since she was a kid and uses a lot of recipes she got from her grandmother. So if you are ever in the Vail Valley, stop by at Lauren’s to taste some of the most delicious cupcakes baked at an altitude of over 8,000 feet!
