The Egg Challenge – Part 2

Jewels:Remember Liz’s eggs last week? She somehow managed to squeeze a brownie into an eggshell. If you really want to blow your child’s mind, this would be the way to go.

So for my part of the egg challenge – which was to highlight an egg in a challenge because Easter Sunday is coming up – is a lot less exciting. But super delicious nonetheless! Lately, I have been torn about eating eggs all together. But if I push all moral concerns aside, and focus on only what my taste buds want, I do love a 7 min egg: all the egg white is fully cooked, the outside of the yolk is cooked, and the inside of the yolk is beautifully runny. Throw some salt on this and you got yourself the best little snack. If you want to turn this snack into a meal, you need a bit more. I tried a version of an egg taco. I basically combined all my favorite foods into one dish: avocado, cilantro, jalapeno, red cabbage, lime, and the perfect 7 min egg. A bit of freshly ground pepper and salt on top and you got yourself an amazing little treat. It’s a mess to eat, but it’s worth it.

I haven’t made the corn flour tortillas myself yet. I would assume it’s not very hard, but so far I have only bought them. I marinated the red cabbage with some olive oil, red wine vinegar, lime juice, and sugar. I cut the avocado into small cubes, and minced the cilantro and the jalapeno. I basically prepped everything while the egg was cooking. After exactly 7 mins, I took the egg out of the boiling water, rinse it with cold water to be able to peel it, and to stop the cooking process within the egg. I peeled it, placed it on my taco, grabbed the whole thing, and inhaled it within a couple of bites. Heaven…
