This week: Challenge for 3!

What?? A challenge for 3? What is going on here? Well this week we are making an exception and are changing our mathematics a little bit: Liz + Jewels + Ronja = Challenge for 3! But who is Ronja??

Ronja is the creator of the blog My World, where she shares her favorite recipes and photos with the world. She recently started a culinary world trip! This enables her to combine her passion for traveling and food by presenting the different typical meals of different countries. Which is why she is a perfect match our culinary threesome!

The recipe we decided to do is definitely American: Strawberry-Cheesecake-Muffins. They are a perfect combination of fruity, moist, sweet, and a hint of salty. Once we showed each other the photos, we realized that we all took a different approach: Ronja made her muffins in small jars, while Liz just ignored the word ‚muffin‘ and decided to make a cake! I made little mini-muffins (mostly due to the fact that they weren’t rising very well). And again, isn’t this fantastic: three people baking the same recipe with three different outcomes?! And here is the recipe, which Ronja found on the blog „She likes“ here:

200g cream cheese
1/3 cup of sugar
a tea spoon of vanilla extract

3/4 cups of sugar
2 eggs
1/2 cup of melted butter
a tea spoon of vanilla extract
1/2 tea spoon of salt
1 tea spoon of orange extract
1,5 tea spoons of baking powder
2 cups of flour
1/2 of milk
a handfull of fresh strawberries

Mix the cream cheese, the sugar and the vanilla together. Wash the strawberries and cut them into small pieces. Whisk sugar and eggs together and add all other ingredients (not the cream cheese mix!). Put a layer of the dough into muffin cups, then a layer of the cream cheese, then some strawberries. Do this all over again, make sure you end with strawberries. Bake everything for 20-25mins at 350°F (175°C).

I made the mistake of not layering but mixing everything together, and it still tasted absolutely delicious!
